whilst working at the bank hotel on the royal mile, peter knight of halkirk and john tindal of airlie came up with the concept of ‘a room in…’ bistro. they envisioned a place serving fantastic food without the addition of paying a fortune for wine or exorbitant corkage, a place where people would feel instantly relaxed and at home, whatever the occasion.

and so they opened up the first venue in 1997, a room in marchmont. the small Scottish bistro on argyle place seating only 25 people, soon became extremely popular. realising their vision was viable and 25 seats were not enough, they established 'a room in the town' in howe street in august 1998.

the business went from strength to strength, so the two highland lads went on to open the two more venues still running today: the former bistro bar was changed to teuchters bar and a room in the west end on william street in 2001 and the former waterfront wine bar and skippers was converted to teuchters landing and a room in leith on dock place in 2008.

incidentally the teuchters name came from peter’s brother … “but you’re just a couple of teuchters!” and as they both hail from the north, the name stuck.

 

as of 2021, after COVID, peter and john realised the bars were running at capacity and decided to retire the ‘a room in’ restaurants and converted the spaces that they occupied into the bars which doubled the size of both bars which has proved a phenomenal success.

 

concentrating on the best scotland can provide with predominantly scottish beers on cask and keg, hundreds of malt whiskies, lots of Scottish gins and rums and a well respected wine list available by the glass and bottle.

food is served throughout both bars with the emphasis on fresh and local with bar classics such as sausage & mash, welch’s fish & chips, mugs of cullen skink and bowls of mac n cheese… there is something for everyone
